Description
This single hop Belgian ale was brewed to showcase a new hop called Polaris; a new high alpha (21 percent!) German variety. Because this hop provides so much bitterness we only used it at the end of the boil and during dry-hopping to give the most flavor and aroma possible. The aroma is woody and spicy with a hint of evergreen. These aromas carry into the flavor which is balanced by bready malt. The finish is dry with a pleasant lingering bitterness.
