The Beers Made By Walking (BMBW) movement was inspired by being outdoors and encourages brewers to get outside and explore ingredients in their outdoor environment. Many different perambulations occurred to help Horse & Dragon decide upon the juniper and cedar used in this beer. Most importantly, the idea of using juniper first came to mind on a hike in Fort Collins’ Poudre Canyon. The idea to use cedar came about through an edible plant tour of The Gardens at Spring Creek, a local community garden in Fort Collins (many thanks to Sherry Fuller, the adult education expert there). The mission at hand: to create a balanced beer with some pleasant gin-like characteristics. The finished product is surprisingly different than the original intention in a most enjoyable way, with fruity characteristics that the combination of juniper and cedar seems to
have imparted to the beer.
 

Tasting Notes
Appearance: Bright amber base, good clarity, topped with a light creamy head
Aroma: “Outdoorsy” malt quality followed by hints of red berries and juniper
Flavor: Sweet caramel and toffee malts mingle on the tongue with a subtle spiciness that finishes clean and reinforces the presence of juniper.
Mouthfeel: Medium body with complex flavors covering the mouth through bright carbonation. Finish: Rounded malt base finishes clean with a sli
Suggested Food Pairings
Amber malts balance with most autumn dishes, complementing the comfort food we crave as temperatures drop.
Starters: Balances BBQ chicken wings, spicy nachos, creamy pumpkin soup.
Mains: Roasted chicken, pork or beef, pasta with a sundried tomato or pesto element.
Cheese: Fresh mozzarella, herbed chevre spread on crackers, farm-style English cheddar cheeses or creamy spreads.
