Verboten-Mayor Collab tapping of ‘More’

On Tuesday December 23rd, a few of us gathered together early in the morning at Verboten Brewery to brew a very rare and unique style of beer. Joining us for the day was a special guest from England, in to brew his second beer with the Verboten/Mayor group. His name, Matthew Curtis and he is an up and coming beer blogger from England.

Our first beer of course was ‘Im All Right Jack’, an Imperial Kentucky Common that we’ve brewed twice and aged in various barrels.

This beer would be an Imperial Pennsylvania Swankey.  I know, I hadn’t heard of it either but Josh finds and brews cool unique beers- They are always delicious, so, lets go with it.

Josh guided us through the brew process making the whole bit feel easy while he pumped us full of other tasty Verboten beers.  At the end of the day we had the wort moved into the fermentation tanks and we were off into the afternoon waiting to see how this recipe would turn out.

The beer would be named ‘More’.  This is one of the rare instances where a movie title (Verboten names their beers after movie and TV references) and Pink Floyd (all of our collab beers have a Pink Floyd reference) come together.  In 1969, Pink Floyd did the soundtrack for a movie named ‘More’.  The album cover featured a blurry duo tone photo of a windmill. I had read somewhere that this was an homage to Don Quixote, so, Sarah designed the logo with that in mind.  I also thought that sales would be huge- asking each patron, as they finished the sips of their previous beer, “would you like more?”.

A Pennsylvania Swankey is a lost American style beer.  We are unsure if there has ever been an “Imperial” version of the beer brewed. This version is brewed with Anise Seed and Star Anise so it should give you a good black licorice flavor.  We have taken a portion of this beer and will be aging it in Absinthe barrels and releasing it again this summer.
