Style Expectations: Rough and unique yet strong and bold in flavor, Belgian Golden Ales typically contain very high amounts of alcohol that help bring the flavors forward while bathing your mouth in an alcoholic warmth. It tends to focus less on the heavier maltiness and instead has fruitier notes like pears, apples, and bananas from both the hops and the yeast. In Irby’s ale, the Saaz give it the Belgian spicy herbal note, yet it’s been “Americanized” with Citra and Amarillo!\
 

*Pair this beer with an apple torte, and prepare to be amazed! The subtle fruitiness in the ale complements the mellow baked apples, while the overall sweetness of the torte is balanced by the snappy citrus hoppiness. Bonus: have this pairing as a dessert, or even for breakfast!

* The high alcohol of Irby’s Ale makes it the perfect partner for aged cheeses with concentrated flavors. Beaufort, a hefty alpine wheel similar to Gruyère, is aged for at least 12 months, during which period it’s washed repeatedly with brine. All this TLC encourages flavor-enhancing bacteria to spout forth fruity and spicy notes, both of which are mirrored in the beer. Even better, the ale’s carbonation scrubs the melt-in-your-mouth feeling of the Beaufort, leaving you ready for more!
