Dripping with sweet honey and rich nuttiness, Baklava Blonde Stout is the newest entry in our #pastrystout series. Recreating the popular Middle Eastern pastry was much more difficult than we anticipated, but fortunately our production team was up for the challenge. We wanted the honey to anchor the flavor profile, so we added over 300 lbs of honey to the whirlpool. We also added lactose to maintain the creamy character our Blonde Stouts have become known for. Finally, we sourced some of the most popular nuts used in Baklava, adding pistachio flour, walnut meal and almond flour to the tank after fermentation. The result is a decidedly sweet dessert beer that would even earn our babaanne’s seal of approval.
