Description

It occurred to us at the brewery that when we trialed hops for evaluation on the pilot system, that Hennepin, our saison, might make a great base beer. We were right.
The malt base of Hennepin is light on its feet, it’s got adequate body from the relatively high ABV, and it finishes crisp and dry. When we removed the spices that are characteristic of the classic Hennepin, then late edition and dry hops are really afforded an opportunity to shine. To be fair to the original Hennepin, we don’t see these hop explorations as an improvement on our old friend, but they are unique, special, and worthy of sharing with those who have an interest in Hennepin, a particular hop, or just great beer.
Single hop beers are nothing new, but the two Hennepin Hop beers this year aren’t actually that. We decided to retain the excellent and balanced bittering qualities afforded by Styrian Goldings in both of these beers.  Both examples are hoppier and more aromatic than traditional Hennepin, accomplished with a combination of larger bittering charges, late edition and whirlpool hopping, as well as dry hopping. Calypso and Triskel Hennepin will be limited releases available only on draft, and we hope to continue these explorations with several new releases each year.
Calypso (April release): Bright fruity and citrus (lemon) aroma with some pear and apple. Slight melon and tea-like character as well. Firm and pleasant bitterness.
Triskel (September release): Fruity, floral and peppery aroma. Amplified “noble” type character. Moderately hoppy taste with great spicy notes.  This hop plays really well with our house yeast.
